Fried rice and Jollof rice are Nigeria’s two most popular rice dishes, though opinions range on which is preferable. Fried rice, in my opinion, is a tasty dish that compliments rather than competes with Jollof rice; it’s like comparing apples and oranges. Why chose when you can have both? Nigerian-style fried rice is often made with long grain rice with beef or vegetable stock, making it vegetarian-friendly. A variety of bright veggies are then mixed with the cooked rice to create a dish that is both colourful and tasty.
How To Cook an Assorted Fried Rice and Salad
- Cut the fresh veggies into small pieces (carrots, leeks, green peas, and bell peppers). Also, carefully slice the garlic. Set aside.
- Set a pot over medium-high heat. Pour in the liquid, then add the rice, salt, turmeric, and bay leaves. Bring to a simmer, then cover and cook for 15 minutes, or until the liquid has dried out. Remove the pot from the heat and set aside.
- Place a frying pan on medium-high heat. Pour in the sunflower oil, then add the chopped garlic and cook until lightly browned. Add the chopped veggies, starting with the peppers, then the carrots, green peas, and leeks. Stir-fry for 3 minutes.
- Add salt and spices (ginger powder, turmeric) for seasoning. After mixing, add the sweet corn and the vegetable combination to the saucepan of cooked rice. Mix everything together, place a lid on it, and cook on low heat for five minutes.

1 tsp coarse salt
few pieces of AmaWonda dried bay leaf
- For the Stir Fry of Veggies
1 tsp of AmaWonda Ginger and Garlic Spice
1 tsp of AmaWonda Thyme
180 leek
1 green or yellow bell pepper
285 g sweet corn
150 g green beans
2 carrots (220g)
25cl of power oil
1/2 tsp of AmaWodna Fried Rice Spice
Salt to taste
Directions
- Cut the fresh veggies (bell pepper, carrots, leeks, and green peas) into small pieces. Finely cut the garlic as well. Put aside
- Set a saucepan on the medium-high heat setting. After adding the rice, salt, turmeric, and bay leaf, pour in the stock. After bringing to a simmer and sealing with a lid, cook for fifteen minutes, or until the liquid evaporates. After turning off the heat, put the saucepan aside.
- drizzle with sunflower oil, and cook until just starting to brown. Add the chopped veggies, starting with the leeks, carrots, and green peas. Fry for 5 minutes while stirring.
- Add salt and spices (ginger powder, turmeric) for seasoning. After mixing, add the sweet corn and the vegetable combination to the saucepan of cooked rice. Mix everything together, place a lid on it, and cook on low heat for five minutes.
